In a large pot sautee onions--I like one whole onion, but I like onions! and garlic--lots--but I like garlic add a bit of coriander--couple of shakes and cumin--couple of shakes.
Add your collards. let them cook down for a bit in a some vegetable broth--about a cup or more--add when you add your collards to the satueed nions and garlic, add salt, pepper, crushed red pepper. Let it cook down until soft. I don't like them mushy, but I like them soft. Let them cook for about an hour. Add some red wine vinegar just before serving. You can add a bit of sugar or sweetner...just a pinch or two!
Just fool around and taste and adjust as you like!
The first time I saw this video I had to go back and play it again because I thought they were faking the second part with the bear, like he was planted. Sure enough, he really is moonwalking in the beginning of this! Since I plan on riding a few hundred miles over the course of this summer (and spend time on a motorcycle too), this definitely scares me.
The bike thing - it is a good point, but unless you plan to cycle at night wearing all black - it doesn't really apply. Most cyclists TRY to be the person in white, not in black. So go put your orange pants and be careful.

Actually, I did see him, but I didn't fully see him and thought he was one of the players in black. Also, though, I only counted 12 passes. You just can't see everything, even when you are looking.
So yeah, please do be very careful on your bike. People don't even always see me, and at approx. 200 lbs. on a bright blue adult tricycle you'd really think they would.
I once saw a video like this in training in patient safety. We were divided into two groups. One group had to count the "white"passes, the other the passes of the black team. In the second group, most people saw the Gorilla os it was in that video. I guess our brains only block out the things we're not looking for...

I was so proud when I had the answer right! Then that's dang bear came into the equation. It squashed my hopes and dreams :)
